Tradition runs strong in the heart of the kitchen at Forest Grill. Both Chef/Proprietor Brian Polcyn and Executive Chef David Gilbert have trained under European culinary masters.  Together they encapsulate the first and second generations of American born chefs.
The passion for culinary excellence can be felt at the Forest Grill and their visions have lead to the creation of something unique in Birmingham, Michigan; the American Bistro.  They are inspired by French, Italian, and contemporary American cuisine with an emphasis on simplicity and flavor.
